Apple pie different

That's a different applie pie that I dearly prepare every year for many friends. It's a "delice" that you will love. Unfortunately my husband doesn't like cinnamon so at home when I make it, I don't use spices apart from vanilla. But if you like cinnamon it's absolutely d e l i c i o u s!
Although you have three different preparations, don't worry. It will not take you more than half an hour to prepare. When you have a program while making many preparations at the same time, be sure that you will reach your target.
Ideal for Thanksgiving, for Christmas and for any other time with family and friends. Check out the recipe.

Preparation time:30'
Baking time: 1h
Waiting time: 1h
Niumber of people: 12-13 (even more)

Ingedients

For the dough:
300 gr plain flour
300 gr powdered sugar
300 gr white almonds ground in powder
2 eggs (large)
250 gr cold butter
50 ml dark rum (if not use the regular one or whisky)
Little cinnamon
2 tea spoon fresh vanilla grains
1 tea spoon baking powder

Filling
10 little apples cut in minimum 6 crescents each
90 gr caster sugar
3 cinnamon sticks
1 fresh vanilla stick (opened with a knife)

Crumble
160 gr plain flour
200 gr brown sugar (soft)
160 gr melted butter
200 gr white almonds ground in powder
1 tea spoon of cinnamon

Caramel jam
Fresh cream beaten to chantilly (without sugar)

Put in the mixer all ingredients of dough. Beat them in medium speed until you get a fluffy extremely soft and sticky dough. Use a baking dish with removable edges. Cover the bottom with baking paper (in the bottom diameter dimensions). Throw then the whole mixture of dough and try with a spoon to fully cover the bottom and the sides of the dish until the top. This mixture will not puff so you can cover until the top. Basically internally the whole placement will look like as if you make a tart. Put it on the fridge for an hour,

Put in a casserole the ingredients for filling. Cover the apples with water (only to fully cover the apples not the top of your casserole) and in medium fire boil them to make compote. It will not take more than maximum 15-20 minutes (starting from the boiling point). All you need is your apples to become softer and little sweet. Throw the water and cinnamon/vanilla sticks and place some kitchen paper to your apples to fully dry from remaining water. Apples must be dry and not too moist.
Preheat the oven to 16 degrees (Celcius).
In a bowl put all incgredients for crumble and mix well with your hands until they are fully incorporated and constiture a thick dough. Put on the fridge for 1 hour.

After 1h:  Take off the fridge the dough on the dish and place one next to the other the apples. Take off the fridge as well your crumble and spread it with your hands on the top of the dough and apples.
Put it in the oven and bake for 1h in the air.
After one hour your apple pie is ready. Even if you see in the crumble in top possibly some liquid drops (buttered only here and there rarely) don't be tempted to bake it more. You don't need to. Take it off your oven and let it cool for at least 2 hours,

Enjoy!!!

What makes this pie extraordinary is two different puffs combined along with spices fitting so perfectly with apples and at the end one spot of fresh cream without sugar to make it... a delice!

Happy Thanksgiving!

Love,
Les Delices d' Eleni
